This sweet potato bread was inspired by Madeline Shaw's recipe that was featured on the I Quit Sugar website.
It is paleo, gluten and refined sugar free. There are only 6 ingredients and no kneading or resting.
400g sweet potato puree
50g of coconut oil or butter, melted
300g almond meal
1 teaspoon of baking powder
pinch of salt
Preheat oven to 160*C.
Combine the sweet potato, eggs and coconut oil or butter in a bowl or a food processor.
Then combine all ingredients and pour into a tray lined with baking paper.
Bake for 70 minutes and leave to cool for an hour.
