Gluten free, dairy free, preservative free and refined sugar free for a satisfying snack. The flavour is like a granola bar so I'd say add additional sweetener if that's your thing.
1 cup almonds
1 cup peanuts
1/2 cup prunes
1 tablespoon coconul oil
2 tablespoons honey, agar, coconut sugar or alternate sweetener
3 tablespoons chia pudding
1 pinch salt
2/4 cup dry roasted sliced almonds or almond flakes
Preheat oven to 180*C.
Blend the cup of almonds and peanuts until they are more of a powdery consistency. Then add the remaining ingredients except for the dry roasted almonds and blend. Can add liquid like water or almond milk etc if necessary so the cookie dough is the right consistency. Then stir in the dry roasted almonds, roll into shape and place on a tray lined with baking paper into the oven. Bake for 25 minutes, removed from oven and allow to cool.
